Here's one of my favorite fall/winter soups:
Squash/Apple
Olive oil
1 C chopped onion
4 cloves garlic
1 T curry powder
1 t cumin
Cayenne pepper to taste
2 ½ lbs. butternut squash peeled, seeded, halved and sliced thin
1 lb tart apples peeled, cored, and chopped
3 C chicken broth
3 C water
S & P to taste
In a large soup pot over medium heat, heat olive oil, add onion and sauté until golden brown. Add garlic, curry, cumin and cayenne, cook, stirring constantly for 30 seconds. Add squash, chicken broth, water and apples. Bring to boil, reduce heat to low and simmer covered for 25 minutes or until squash is tender. Remove, let cool for 15 – 20 then puree in blender or food processor in batches. Season with S and P.
I put in a little more curry and def. more garlic. And I use 4 C of chicken broth and 2 C of water. The recipe done like that serves 6 hearty soup eaters.
